Recipe Tomato, Mozzarella and Basil Salad
This is a really easy and refreshing salad. I used different varieties of tomato for colour but more importantly flavour.
500g Mixed tomatoes, sliced
125g Mozzarella pearls, some torn, others left whole
50-75g Fresh basil, torn
Extra virgin olive oil
A twist of salt and pepper
1. Layer the tomato and basil leaves, place the mozzeralla and season with a couple of twists of seasalt and pepper. Drizzle over the olive oil.
